I love Cassava Flour as if you close your eyes andfeel some of it between your fingers and at the same time do the same withRegular flour, it feels the exact same!! It does not have the grittiness to itat all that you assocoaite with GF breads.  My kids can’t tell the digfference at all and I don’t think you willeither.

I tend to use the same as in my main breads, exceptfor the flour of course.   If I make anew recipe, I make a GF version as well, except if it contains Guinness, whichis a wheat based Stout. I charge the same price for regular and Gluten free aswell!!

I sell a lovely GF Sandwich bread that is yeast basedbut the two I sell most of for the mornings are the Blueberry Orange JuiceBread and the Banana Breads I make.   TheBanana Breads are Dairy free as well!! The Blueberry is basically like a hugemuffin.
