What are the Best Gluten Free Baking Ingredients?

I love Cassava Flour as if you close your eyes andfeel some of it between your fingers and at the same time do the same withRegular flour, it feels the exact same!! It does not have the grittiness to itat all that you assocoaite with GF breads.  My kids can’t tell the digfference at all and I don’t think you willeither.
